As a butcher, you’ll know that when it comes to selling beef, most of your customers will be familiar with the cuts like sirloin, rib-eye, and filet mignon. However, did you know that there are few lesser-known cuts of beef that offer unique flavours and textures, as well as providing your customers with an affordable option when compared to the familiar cuts we’ve mentioned above?

Here at Butchers Equipment Warehouse, we’ve put together a list of a few lesser known beef cuts that you can serve in your butcher’s shop, as well as a few cooking suggestions that you can pass on to your customers.

Bavette Steak

The bavette steak comes from the abdominal muscles of the cow and is generally regarded as a flavourful, tender cut of beef. It’s cheaper than your average sirloin, and it’s a great choice for customers looking for a delicious beef product on a budget. For the best results, the bavette steak is delicious when marinated in a smokey barbecue sauce, grilled and served in thin slices. Bavette steak is really cheap and easy to prepare, making it the perfect meat to include in dishes like fajitas, stir-fries, or sliced for salads or sandwiches.

Ramp tail steak

Although not the most appealing name, ramp tail is a rich, beefy, triangular cut that comes from the bottom of the sirloin. It has a bold flavour that really comes into its own when grilled or roasted, making it a great choice for those customers looking to do a Sunday lunch on a budget. Fun fact - ramp tail is also very popular in Santa Maria-style barbecues, where the meat is cooked directly over fire in an open pit grill. So if your customers are looking to create the ultimate barbecue experience right at home, providing them with delicious ramp tail is a great place to start.

Chuck eye steak

Chuck eye steak < comes from the shoulder of the cow, and it’s often referred to as the “poor man’s rib-eye.” Don’t let that harsh label lead you to any premature conclusions though –the chuck eye is an exceptionally flavourful cut that’s delicious when pan fried with garlic and seasoning. Chuck eye steak is a great option for customers who want the flavour of a rib-eye without the rib-eye prince tag, and in our opinion, it’s equally as delicious.

So, the next time you’re taking stock, consider offering some of these lesser-known cuts of beef to your customers. Not only are they very affordable, they also offer unique flavours and textures that we’re sure your customers will enjoy just as much as the more expensive cuts. With that said, the right equipment can go a long way in ensuring that your cuts are as good as they can be, and ensuring your customers keep coming back. That’s where we can help.
