Spring Season BBQ Tips
We finally seem to be working our way out of the cold freeze that has gripped the nation. As a country of constant weather optimists; the first rays of sunshine are usually greeted with an army of shorts-wearing, sunglasses-sporting BBQ chefs.
So dust off the small inflatable pool for the kids, invite your friends over and treat everyone to these unique and unusual BBQ dishes.
Barbecued Chicken Tikka Masala
Chicken Tikka Masala is one of the staples of the Great British diet. Every day, millions of Britons treat themselves to the spiced dish rich with chicken. Whilst mostly prepared on a hob, the dish can also be created with a BBQ.
Use a small butchers knives to cut chicken breasts in bite size chunks, skewer and place on the barbecue. Rotate regularly to ensure that the chicken is cooked through. Combine yoghurt, lemon juice, cumin, cinnamon, cayenne pepper, black pepper, ginger and salt together in a bowl to create the sauce. Marinate the cooked chicken in the sauce and simmer in a pan for 10 minutes.
Butterflied Leg of Lamb
Use a cleaver to extract the meat from a leg of lamb. Trim the leg and debone. Use a smaller butcher knife to remove the pieces of meat that are harder to reach. Cut the meat into chunks about three inches long and one inch wide.
Marinate the lamb in the sauce of your choice overnight. This will allow the marinade to soak the meat and sink into the flesh, penetrating every sinew. After heating the BBQ, transfer the meat to the grill and cook until only a small pink representation is visible.
Barbecued Marinated Swordfish
Fish is often criminally overlooked during the BBQ season in the UK. Many of our European neighbours wear by the simplistic and healthy barbecued fish. As one of the fleshier fishes; Swordfish is perfect for the BBQ.
Created a marinade of garlic, white wine, lemon juice, soy sauce, olive oil and pepper. Soak the swordfish in the marinade and then simply barbecue the swordfish for 5 minutes on each side.
Chocolate Toffee Fluff S’Mores
The BBQ can be effectively used to create sweet treats as well as savoury meals. The kids in particular will love this rich and chocolaty snack. Place a couple of marshmallows on top of a digestive biscuit. Crumble one finger of a Twix chocolate bar on top of the marshmallows, and then place another digestive biscuit atop this to create a sandwich. Lightly grill the sweet sandwich on then barbecue for a melted, gooey treat.
